Del and Malinda are planning their wedding on her family's farm in Greenback on what may be the most popular wedding date of 2008. I can't tell you how many inquiries I've had for 6/7/08 since they booked it, but I'm really looking forward to spending the day with such a great couple. I may even talk her into doing some photos with a horse.

Malinda is in school in Memphis, but we were able to fit in a session when she was in town last week. We lucked out with really great weather and color. Here are a few favorites photographs.

I fit in several portrait sessions last week before the last of the leaves fell from the trees. It was a beautiful fall, and I am already dreading the cold winter ahead. Here are a few shots from Abbey's session. Abbey is a great basketball player who has already been signed to play college ball, and she did an excellent job smiling over and over for the camera. She isn't a fan of serious poses, but I had to include just one because I liked it so much.

Salem Presbyterian Church, Limestone, TN

Laura and Bart are celebrating their second wedding anniversary today. Their wedding was in Limestone, TN at the historic Salem Presbyterian Church. Unfortunately, I got lost on the little country roads in Limestone. After wandering around the country side, I was able to get cell service and call Marcus at home to look up better directions.

The day was surprisingly warm for late November which gave the couple a great opportunity to spend some time alone together before the ceremony. They were both relaxed and extremely happy as they walked across the old Washington College campus, hugged, danced, and laughed. Laura is such a sweet person and puts everyone at ease with her quick smile. The day went smoothly and was one of the least stressful weddings I have ever seen.

Afterward, the couple went home to live in New York.

It's that time of year, and I'll be spending my time with family and eating lots of delicious food. I will not be checking email over the next few days but anything received will get a reply next week. Hope you all have a great holiday!

For all my dedicated blog readers, I've decided to share my recipe for the best EVER sweet potato casserole. I promise that if you make this correctly, everyone will love it.

INGREDIENTS:
• 4 cups mashed sweet potatoes (I mash canned yams with the syrup drained off)
• 1/2 cup white sugar
• 2 tablespoons vanilla extract
• 4 eggs, beaten
• 1/2 pint heavy cream
• 1/4 pound butter, melted
• 1 cup packed brown sugar
• 1/2 cup all-purpose flour
• 1 1/4 cups chopped pecans
• 1 cup flaked coconut
• 1 teaspoon ground nutmeg
• 1 teaspoon ground cinnamon
• 2 cups mini marshmallows

DIRECTIONS:
1. Butter one 2 quart casserole dish. Preheat oven to 400 degrees F (200 degrees C).
2. In a mixing bowl, mash the sweet potatoes; combine with sugar, vanilla extract, eggs, spices, coconut, marshmallows and cream. Blend well, and spread evenly in casserole dish.
3. Bake 20 minutes.
4. Prepare the topping by combining the butter, brown sugar, flour and pecans. Mix until crumbly, and sprinkle over sweet potato mixture.
5. Bake an additional 10 minutes.

**note: When cooked, the casserole will be moist but firm, similar to a souffle consistency. If it is still runny then it is not fully cooked. You may want to test around the edges for doneness before adding the topping because it is easiest to add additional cooking time at this point. Once the topping is on, you can cook for longer but will need to cover with foil so that the nuts don't burn.
